After that, the starting stages of the processing of the olives of each supplier will be worked separately from each other, practicing so-called partisan processing, which takes place within 24 hours of delivery.
In the first phase, the olives are thoroughly deflated and washed with water to remove leaves, soil and any foreign matter, and then go to the brewing phase from which an olive paste is obtained, consisting of oil, water and sage (fragments of hazelnut And residues of the pulp) which is then blended to agitate the oil particles by facilitating the subsequent phase of the extraction, in grams, or basins heated at low temperatures and carefully monitored to not alter the organoleptic properties of the oil.
The pasta of olives after about half an hour of grain is pushed through a special pump from the grain to the Decanter, a horizontal axis centrifuge where there is separation of the sausage, oil and water that are then sent to The separation fees (vertical axis centrifuges).
At this point, the oil comes out of the separator and takes “life”, ready to be consumed, as a tradition in the first place with a beautiful “bruschetta”.
In our mill we have the bottling and storage room, a dry and sheltered room, where we store the oil at controlled temperature in stainless steel barrels, equipped with pneumatic float, to isolate the oil contact with the oil, Oxygen, limiting oxidation and consequently maintaining all the features of a newly extracted oil in the long run.
In the barrels, the oil is naturally decanted and then eliminated by sediment (sludge), by performing the traditional pouring practice, obtaining the purity and clarity typical of the extra virgin olive oil we are proud of.
